Get ready to embark on a flavorful journey like no other at Raffles Grand Hotel d’Angkor. Its just unveiled super exclusive, drool-worthy Khmer tasting menus that will sweep you off your feet. It’s a one-of-a-kind experience that will make you fall in love with Cambodian cuisine.
Let’s talk about the culinary genius behind these menus, Executive Sous Chef Dorn Doeurt, or as we like to call him, Chef DD. This Khmer cuisine maestro hails from Siem Reap and knows the ins and outs of Cambodian food better than anyone. From traditional Royal Khmer dishes to modern Khmer gastronomy, he’s got it all covered.
Chef DD spills the beans on his inspiration, “I wanted these menus to be a perfect intro to Khmer cuisine, highlighting the freshest local ingredients. Well, they’ve categorised it by decades. You can dive into the 1930s with “The Reign of King Sisowath Norodom” for $80++, or groove through the 1950s with “The Grand Renaissance” for $50++. Feel like a ’60s vibe? “The Golden Age” is yours for $60++, or you can go all out with the ’90s and “The Raffles Grand Legacy” for $120++. You can even pair your meal with some fantastic wines or pick and choose your favorite dishes à la carte.
Now, let’s talk about the star of the show: the “Raffles Grand Legacy” menu. Picture this, Phlea salmon with lemongrass, coriander and a spicy lime sorbet to start. Then, a duck consommé with straw mushrooms, eggplant, and morning glory. Don’t forget the legendary 1932 fish amok with kroeung curry paste, coconut milk, and black sticky rice.
